This article discusses the types of natural dyes, their ecological and health significance, as well as their use in the food industry. In particular, scientifically based information is provided on the properties, composition and technology of obtaining natural dye from pomegranate peel. Natural dyes are distinguished by their safety and biological activity compared to artificial dyes.
